Chicken, Lentil and Swiss Chard SoupServes 21 tablespoon coconut oil1 onion, chopped4 garlic cloves, chopped1 cup brown lentils4 cups vegetable broth1 tablespoon thyme1 bunch Swiss chard, choppedJuice of 1 lemonSea salt and black pepper to taste½ roasted chicken, chopped (see recipe in “Entrees”)Melt coconut oil in a hot soup pot. When the oil is melted, add the onion and garlic. Let it brown for about 3 minutes. Add the lentils, broth and thyme. Cover and cook for about 25 minutes until the lentils are tender. Add Swiss chard and let the greens wilt into the soup. Add the juice of one lemon, sea salt, black pepper and chopped up roasted chicken. Stir well and
