Energy Balls with Blueberry and Lemon

Blueberry Lemon BallsMakes about 10 balls1 cup sunflower seeds½ cup unsweetened shredded coconut½ cup dried blueberries½ cup pitted datesJuice of 1 lemon1 teaspoon vanilla extractpinch of sea saltAdd all the ingredients to a high-speed blender or food processor.   • 1 cup sunflower seeds
  • 1/2 cup unsweetened shredded coconut
  • 1/2 cup dried unsweetend blueberries
  • 1/2 cup pitted dates
  • juice of 1 lemon
  • 1 teaspoon alcohol free vanilla
  • pich of sea salt


  1. Add all ingredients to a high-speed belndor or food processor
  2. Blend until well incorporated
  3. Use a tablespoon to measure the mixture as you spoon it out and roll it into balls
  4. Store in the refrigerator for up to a week, or freeze to store up to several months
